I want to use specific colors in my tables. I have the hex code for these colors (for example #A9AF90). How can I tell Numbers to use a specific color with is hex code? I couldn‘t find an option for this.

Usually you open the Table formatting option, and there is a pink slight globe looking icon, click on that and select web safe colours. And enter hex code.
Having done that for yours, can't seem to see a style of hex code that applies.

On a mac, web safe colours are very limited because they're the ones that are guaranteed to work on all devices (ie, web safe)... but there's also a hex code box underneath the RGB sliders.

Don't have numbers on my idevices to check... but is there something similar to this?

Just looked, and couldn't find anywhere other than font colour changes, and couldn't find the similar Mac colour slide at all.

This box with the Hex value of the colour used to appear with Numbers 10.1 under macOS Mojave. The hex value has disappeared in Numbers 11.2 under macOS Monterey. I'm trying to find out how to reinstate it.The only work around I have found is to use the pipette on an existing instance of the colour one wants. I wish Apple would leave good things alone!

Ah I've found it. On the new Monterey versions of Pages and Numbers - and présumable Keynote also 'though I haven't tried it - my default settings of the Mojave versions didn't transfer across to the new machine. One has to chose the "text colour" and then in the colour tool box chose explicitly the "RGB sliders" in the drop-down box at the top of the colours box.
