I currently have a jailbroken and unlocked iPhone using blacksn0w, however I've requested the official O2 unlock. Will I need to restore to stock firmware to get the official unlock or will I be able to leave it jailbroken?

If you've got a non-O2 sim card - remove blacksn0w, insert non-O2 sim, and then connect to itunes. You should see the congratulations message to confirm the unlock.

No need to restore AFAIK.
