Just put 11.2 on my iPhone 7, but now realize I probably should have held off until the X comes so I can restore from backup... this always bites me. I'd prefer not to get the new phone and immediately have flash it with 11.2 before I restore. Unless anyone knows that this won't be the case?

I always turn off iCloud Backup before installing a beta. This way I can roll back easily if I have to, and won't run into situations like the one you posted about.
The backup being a few days out of date isn't a big deal since important stuff is backed up separately anyway. Once the beta has proven itself I turn on iCloud Backup again.

This. If you just flashed it, it wouldn't have backed up yet, so simply switch off iCloud backup now and you're golden.
I always set up as new, install the profile and then restore from backup when getting a new phone. Not really a hassle tbh.
If we had iMessage in the cloud working I would start this iPhone from new- that's the one piece holding me back from starting fresh.
Agreed, I do the same as well. The only downside is that any apps I installed while on the beta I'll have to reinstall later as new apps and lose any app data associated with those but that hasn't been a huge deal for me.
This is my feeling exactly! My backup was from my iPhone 3G which includes my messages all the way back to 2008. This summer, when the iMessage syncing was working, I was able to have my messages sync, and then erase and start as new while retaining my messages. It was great!
