I have an iPhone 5 that hasn’t been used for years. I was thinking about using it as a cycling computer as it has all the necessary hardware. It would not need to make calls, play music, txt, etc. Basically just gps and the ability to download apps specific to cycling.

As the iPhone 5 is stuck on iOS 10. Many apps won't be compatible. This compatibility will just get worse over time. As long as you can get all the apps you need. This should work.
 
I have runtastic pro installed on it and it looks like it should do the trick. I’ll keep WiFi, cellular(no sim) and Bluetooth off. Any other power saving tips?
Otterbox Armor cases are very reasonable so I may get one of those as I will use this on an ‘out front’ mount.
 
when you say GPS, I'm not sure if you're talking about mapping or just recording where you rode. If you're looking to actually navigate by it, there are several apps that allow you to download maps & use them with Wifi/Cellular off. Nokia Maps (I think it's now called Here or Here we go), maps.me and even google maps allow this.
 
I have google maps installed. The runtastic app has a route history to kind of map a ride. With g-maps I’ll always have the option of turn by turn directions. Although not much use for that on a dedicated trail.
I have the phone prepped to where I want it and gave it a battery drain test today. With the screen always on it lasted a bit over 6 hours. That’s more than enough as I’ll have it set to turn the screen off after 5 minutes.
I may download the map of theGAP trail just to have it available.
Also bought an otterbox armor case - $15 new.
