I currently have a Hackintosh that is causing me more trouble than it is worth. So I am looking to get a mac.

I primarily use the computer to web and other general tasks, gaming (only blizzard titles), and video encoding.

I really would like to spend under 2.5K. I would like to use the computer for the next 4-5 years.

I like the upgrade ability of the old mac pros. I do game some and to have the ability to upgrade the GPU is nice. I also like to have all my backup drives with in the computer and I have a nice 27in IPS monitor already.

My main question will the 2010-12 mac pro be able to hold up another 4-5 years with some upgraded parts? Or is it better to just get last years non retina iMac and hope the GPU is good enough?

It's always hard to tell the future... but if processor speeds stay relative for that time frame a 2009 + would be a fine choice.

You can drop in any popular 3rd party graphics card and can go a few routes if you want full EFI support.

You can drop in PCIe SSD cards and setup RAID to get really fast boot/app storage.
 
Be prepared for a fair degree of sticker shock when looking at the price of used 2010/2012 Mac Pros. Actually more like the 2010, because it is very hard to find any geniune 2012 Mac Pros on the used market.

In either case you will be paying a pretty penny for them.

As far as the iMac goes, no one really buys an iMac hoping to keep it around for 4-5 years as a gaming machine. If you were to buy a riMac today it might last you 3 years as a gaming machine. Provided you maxed it out and the thing doesn't melt before your applecare runs out.
