I've got a Mac mini w/catalina, tried to down load my office 2011 home and student and it won't work. Isn't there some way I can make up a page using different fonts, add pics and symbols as I wish. I use notes but if you change one font, you change them all.

Yep, the folks at Microsoft have a problem when a person who bought AND registered Office2011 cannot use it because the registered key does not function. I gave up and told my friend I could edit his resumé if he would send it as a PDF. (He was using Windows on his computer and could not use Word.)

For the uses you describe, Pages (made by Apple) would work well.

The OP's problem is simply that his 32-bit version of Office is not supported on Catalina, and is not supported by Microsoft either. Supported versions of Office (2016) were updated to 64-bit.
 
You could put Mojave on the Mini, and all your old 32-bit apps would again work (that's why Office 11 won't run -- it's 32 bit and Catalina WILL NOT RUN 32 bit software).

Having said that, you could try one of the free "Office substitutes" (such as LibreOffice).
Or... have you tried Apple's Pages app?
