My old non-Apple widgets are still available by way of a right-swipe from my Home Screen but there is no way to edit them as there is no edit button.
 
That only gives you access to add/amend the new Apple widgets.
I suspect this is something that will require app updates so hopefully get fixed for launch date.
 
Enter wiggle mode like BasigGreatGuy says, but instead of using the plus button which is for the new-style widgets, scroll to the bottom, the edit button is still there

I should clarify that it seems that editing old-style widgets seems to only be available on iPhone, not iPadOS at the moment

Actually, it’s possible to do on iPadOS also, but you have to first scroll to the bottom of the widgets, then go into wiggle mode and the edit button will appear.
