What is it that is NOT upgradable on the old mac pros? and if you can upgrade everything why would someone buy a newer computer, mac pro 2006 to 2012 or something? to run newer osx?

From what I have read, my 2008 Mac Pro cannot be upgraded with a new CPU. But even if it could be, I'm not interested in spending the time/money to do so. I'm comfortable upgrading RAM, graphic cards, drives, but not the CPU. And since I use my computer to make money, I have no problem spending 4-5K for a new Mac Pro (and the necessary external storage) when the time comes.
The Logic board is not upgradeable. The 2009-2012 is X58 so you are limited to 1366-pin CPUs which are no longer being produced. They are still easy to get on the used market and perform well enough for many users (for the moment).
The 2008 and newer Mac Pros are able to run the latest OSX.

Well you can't put a *new* cpu in there, but you can upgrade it. I replaced my quad 2.8s with 3.2s for a total of about $300 a year ago. Worth it IMO.
I ran a Mac Pro 1,1 from Aug 2006 - Dec 2012 ("replaced" with a Late 2012 Mac Mini).
From my perspective, the main issue with the older Mac Pro's is there's no good way to get to SATA III, Thunderbolt, no USB3. Especially the 2006-2007 models. With 2008+ you get a few more options.
