Oldest Mac Pro worth getting for today's imovie/FCPX/Aperture?

Just curious how yesteryear's model compares to what is currently on Apple's website.

Any of them. I would just make sure you have a decent GPU. The 5770 at least is a worthy upgrade.

Some Mac Pros that ship with things like the 2600XT will definitely need a GPU upgrade.

I'm running FCPX on a 2007 8 core, with an Apple 5870, it seems to have no trouble with full HD real time playback. This barefeats article: http://www.barefeats.com/wst10g7.html shows there isn't much difference between the 5770 and 5870 in the older machines. I'd buy a 2008 (faster bus speed) and a 5770 and you'll be set.
