Hi folks

Does anyone know why it’s not possible to make folders containing subfolders available offline? E.G. You select the top level folder and it automatically creates subfolders offline.

That is interesting. I'm able to make folders containing subfolders available offline in OneDrive.
 
Its a pain for sure. I'm a heavy OneDrive users. Here's a note on a support page for OneDrive related to the issue:

Notes:

Files or folders marked offline are read-only - you can edit them only when you're online. To edit an Office file while offline, you’ll need to open the file while online in the required Office app. You can work on it offline after you've opened it.

Taking folders offline is available for Premium OneDrive with an Office 365 subscription.

This really hampers ones capabilities during travel, forcing one to have to think ahead and physically copy any files that are needed for editing to the device in advance of departure from internet connectivity. Just another reason why I end up paying for LTE variant of the iPad. Still, I sometimes get caught off guard on a flight and end up not being able to work on a file because of it.

I misunderstood the question initially too because of how it is phrased. Setting a multilevel folder tree to available offline isn't the issue, the issue is once that tree is available offline and you are truly offline you're unable to edit that folder structure or add to its contents. Attempting to do so will result in a message warning you that you need to be online to complete that action.
