For the past two weeks, since receiving my AirPod Pros I have had ongoing issues with bluetooth pairing. Issues include things like the AirPods connecting but Siri doesn't work. In other situations, the audio output is different between the left and right ears. Anyone else seeing issues like this - especially with Siri?

No, everything is working as it should, even with Siri.

I assume you did all the normal things: forget and repair, reboot, etc? Might be time to call Apple Support.

Yea.... some of it. I reset network settings. Reboots ALWAYS fix the issue. Apple thinks it's a phone iOS issue and wants me to wipe my phone. I just haven't had time to wipe it and restore it...

I did a full wipe and I'm already seeing a different. Prior to the wipe, the iPhone wouldn't even bring up the AirPod pop up showing battery, etc (e.g. the white box at the bottom).

I noticed some hiccups. Sometimes one side won't sync or even the syncing was off by a 1ms. after putting them back in the charger and taking them back out, it fixed theses issues.

After a few days of working great post wipe I'm back to bluetooth issues. What's odd is that even if I'm not using the AirPods, Siri will act up, but it only starts acting up after the AirPods Pros connect. Arg...
