Still running 10.3.3 and since today the update menu only shows me iOS 11 as an upgrade option.

Did they pull 11.1.x from the SEs?
 
The Developer Portal lists 11.1.1 (15B150) as available as a restore image for iPhone 5s and SE.
 
Hmm, but on mine it just shows 11. Who cares, did not plan to install the obsolescence update any ways.

Can't imagine, with iOS 11.2 beta 2 performing as it does on my iPhone 7, how you'd call iOS 11 an "obsolescence update".
 
I think if you're on iOS 10 it focuses on the major version and calls it all iOS 11. Or maybe I'm thinking of the description?

Self-explaining, because my phone just shows 11, where it showed 11.1.1 yesterday.
But then you said "who cares".

In any case, sounds like an earlier update was downloaded to your phone and that's what's showing up as being ready to install. You'd want to check your storage settings and delete the downloaded update from there.
 
I still only have the option of 11. I have tried the link to 11.1.2 with no luck, which sends me to 11. I am still on 10.3.3, iphone 6s.

Well, if you want to update, update to what it offers and then if it's not the latest for some reason, check for updates and update to the latest (as it should offer that at least at that point).
