The first is too small, I am used to a 24" screen and the latter really seems extravagant for home use. Was hoping Apple would introduce a midpoint with latest re fresh to enter the world of my first iMac!

There are many 24" models available on eBay with Core 2 Duo processors. You can usually find them with at least 3GB RAM, too. Not going to melt your face, but they are available.

From personal experience, the 27" is gorgeous. The refurbished models from last year are at $1269 on Apple's site, and you will not be sorry. If you have the space, the 27" machine is unparalleled in beauty and utility (for an all-in-one).
 
27" might feel big in the beginning but after few weeks of use, you can't go smaller. Don't hesitate to buy one.
 
I to find the 21.5 just a little to small.

I like the size of the 27" but don´t need the real estate(i´m not a proffesional) and it makes text look small.

Apple should have updated the 21.5" to a 23" size as there are affordable 23" IPS panels on the market which cost little more than a 21.5".
Just look at the Dell Ultrasharp U2211 and U2311.

I wouldn´t be suprissed if the imac 21.5 and the U2211 are using same panel.
