I am running the Big Sur Public Beta, I am not seeing any information when I do a Left Click on any app. This is the only problem that I have had with the Beta.

Report it to Apple with Feedback Assistant, they don't read MacRumors ;)
The info if you look closer is indeed there, it's just white text on an (incorrectly) white background. Probably from an incomplete switch to Dark Mode. Do you have Auto on for dark mode?

Found an old terminal edit that i did back in Catalina:
"defaults write -g NSRequiresAquaSystemAppearance -bool YES"
When I changed it back to NO everything is OK in Dark Mode. I like all the other changes this command does so until I can find another command to fix the menu I'll live with it.

There's a bug with reduce transparency turned on in dark mode. Turn that off in system settings and that'll fix the rendering until they fix it in the OS.
