I have made a basic error, I have built an installer for an 18,3 machine and used it on a 12,2 machine. The result is that the install hangs after the second re-boot. I have built the correct installer and tried to run that but it still hangs after the second re-boot. Is there any way back as I now cannot boot any operating system on this machine. I don't want to format the machine as I will lose all my videos which are not backed up.

Shut down. Restart while holding Option key. Do you get the boot picker? What do you see? Hopefully, you see the original, hardware supported boot volume before you attempted Open Core shenanigans.

As you've discovered, you're playing fire. Back up your files first before you do anything.

Worst case scenario: Take the iMac to a data rescue service to rescue and back up your videos.

But for a second thought: iMac 12,2 is easy to remove the internal SSD/HDD, so if your OS installing process hadn't erased the entire internal disk yet, you could still simply take it out, put it in an USB enclosure and starting from that point to verify whether your videos are still there and can be backed up.
