Hello all, does anyone know how to disable the 'feature' that seems to be prevalent with most default macOS apps of displaying a File Open dialog on launch? TextEdit, iWork, etc.
 
Those are typically apps that are used to create new documents, or to edit an existing document, so quite normal to launch with a File Open dialog box.
Or, you can find the document that you want to view (or edit). Right-click on that document, then choose Open With, and select that app that you want to use to open that document. The File Open dialog will not appear at that time, because you chose the app used to open that document. Or, no document, just click the New Document button in that window to open a blank document. And--now you are creating a new document, which you would print, or save (to provide a document that you can then use at some later date.)
Is there something that I missed that you wanted to ask about working with documents?

You can use a Terminal command, or remove specific apps from System Settings - Apple ID - Apps using iCloud - iCloud Drive - Apps syncing to iCloud Drive

defaults write com.apple.TextEdit NSShowAppCentricOpenPanelInsteadOfUntitledFile -bool false

which will make TextEdit open a new empty file, the window of which is then replaced by the first other one you choose to open; not that it's less noticeable than an open dialog, if that's the problem...

apply to all apps with

defaults write -g NSShowAppCentricOpenPanelInsteadOfUntitledFile -bool false
