When I dock my iPhone, should iTunes automatically open and sync? iTunes does not open automatically, but when I open iTunes, it will sync automatically. The box is checked in iTunes to sync when connected but iTunes won't open when I dock the phone.

You can choose in the preferences of iTunes whether or not to launch iTunes when you connect your iPhone.
