I've been running Catalina on my Mac Pro 5,1 using Open Core for a month or so. Last weekend I added a new Bluetooth/Wi-Fi card in order to use the Watch Unlock feature and got it working but I don't recall ever touching the config.plist file.

I was just looking at upgrading to Big Sur and was looking at the changes necessary but I've seem to have lost OpenCore. Mounting the EFI drive shows an OC folder but no config.plist file. I tried to check if OpenCore was running but the command I used doesn't seem to find it. Lilu and WhateverGreen are in my Kexts directory so I'm sure I've got the right volume. I've checked my Trash can and there's an older EFI volume in there but I don't see a separate config.plist file hanging around outside the Trash can EFI volume.

Code:
% nvram 4D1FDA02-38C7-4A6A-9CC6-4BCCA8B30102:opencore-version

nvram: Error getting variable - '4D1FDA02-38C7-4A6A-9CC6-4BCCA8B30102:opencore-version': (iokit/common) data was not found

VideoProc still shows Hardware Acceleration available.

Did I somehow erase the config.plist file or hide it?

Is it possible to actually run Catalina without OpenCore after the initial setup?

Finding this all kind of strange.

I eventually gave up and reinstalled OpenCore and verified it was the current version. Not sure where my config.plist went but it doesn’t look like I was booting OC. If I was, it was booting without config.plist or finding another copy of it somewhere.
