So i have a macmini 3,1 and i have tried both DosDude and Opencore legacy patcher to install and i have the same issue. When booting off ANY installer, and I have tried numerous drives, the progress bar dies not move. Any ideas?
 
I'll try that but it doesn't matter what I use, opencore or dosdude, and its just this machine. Many others work fine, didn't know if anyone had a similar experience or something I can do in setup to bypass this, spoof etc.

I had an issue with a mac mini 2012 "Core i7" 2.3,
using OCLP with Monterey as the system crashed after a day of really good use.
meanwhile the MBA-2010 ran Mojave with DosDude's patch for several years.

the first thing is to make sure the firmware is updated.
then a ElCap or High Sierra base as Mountain Lion did not enjoy the jump to Mojave.

Yes. Mac mini 3,1 supports El Crapitan 10.11. First install latest El Crapitan to update firmware. Then use OCLP to build macOS installer USB media. Don't forget to patch (install EFI) the installer USB media before booting from USB media!

I did update El Crapitan but don't remember a firmware update. Should I do high sierra first?
 
that should work better than El cRaption since that is more modern and im sure that has APFS.
umm what OS are you installing?
High Sierra and it worked. It looked like the step I missed was not making sure SIP is disabled. Meanwhile it worked but now I came in and the progress bar is not moving again
