I've seen mentioned by several people that you can't open multiple windows of apps. But, in many, you can.

To open multiple windows, you generally click and hold a document, then as it separates from the window, you pull it out into a new space.

In notes, you click and hold and a menu pops up that gives the option to open in a new window.
