I picked up my iPhone 11 Max Pro on launch day. Last night when I plugged it in for charging, the Optimizing Battery Charging notification appeared for the first time. In my case, it took 16 days for the phone to learn enough to start using the feature. The message said it would resume charging at 4:30 am although my usual time to remove from the charger is closer to 7 am. Will be interesting to see if it adjusts over time to more closely align with how I use the phone.

That is great observation. I assume it will adjust over time but the question is what is the average time for it take to learn your charging behavior. I have never or will use this feature since I only plug in my device when I need to charge and disconnect once it reaches my desired level.

This is my use case as well. In fact I never put it on charge over night as I don’t have a charging stand next to my bed. I charge my phone to 100% before going to bed and then charge as and when I have access to a charger throughout the day.
 
I wish there was a simple “charge to 80% max” toggle. It would make things a lot easier. But good to know iOS takes about two weeks to learn charging habits.
 
UPDATE:
As noted in my OP, Optimized Battery Charging activated on my iPhone after 16 days of learning time. The first night it notified me that it would resume charging from 80% at 4:30 am. Night 2 saw that pushed back to 5:30 am which is closer to my normal wake and take off the charger time. Good to see it's adjusting based on my actual use pattern.
