My wife got a bunch of photos and videos in her iPhone, is there is a way to export them to my computer, organize them in folders…etc and then import them back to the iPhone?

This is definitely do-able... I have my photos organized this way. It appears from your tag line that you are on MacOS, so that means you can use native MacOS tools. First, create an account on your computer for your wife, using System Preferences (this just keeps things cleaner). Log into her account, connect the phone, it will ask you to enter the unlock code on the phone to trust the computer. At this point I would recommend using Image Capture (found under Applications/Utilities) as the program to suck all the photos out of the phone. You will probably want to check the box that deletes the photos on the phone, otherwise everything is going to be duplicated when you put the re-organized photos back onto the phone.

Once the photos are on the computer, organize them as you see fit. My system is to create a “Best of XXXX” for each year, and put duplicates of the originals into those folders (you create duplicates by dragging from one folder to another with the option key held down). Then all those Best of XXXX folders get put into one big “All time best” folder. You can also use Photos to grab the photos, but I don’t think you’re going to be able to get albums (as defined in Photos) to transfer across to the phone, unless you use iCloud Photo Library. Actually, iCloud Photo Library is also a completely valid way to accomplish your goal, but it requires you to subscribe and pay for it.

Once you have your master folder filled with the photos you want, organized into sub-folders for years or subjects or whatever, then you can drag and drop that master folder onto the device in the iTunes sidebar. In the new iTunes that is supposedly how you transfer files to a device; I say supposedly because I have not upgraded to the latest iTunes, and am instead running iTunes 12.6.3, which preserves the old paradigm of having a page for photo management. However, from what I’ve read you can still transfer photos to a phone using the drag and drop onto the sidebar in latest iTunes.

The net result should be that the sub-folders turn into albums under Photos on the phone. Good luck!
