If I get a mac mini with OS X Server version, would i be able to uninstall the server components and only keep the regular, non-server desktop version?

Just don't open the Sever Control panel and you'll never know it is Server instead of ML.

Spot on. the machine comes with Mountain Lion, and only setups the server components if you start and run Server.app.

Yep, then whip out the ram and upgrade it to 16gb, ML really benefits from more than 4GB of RAM.

Then your next step is to replace 1 of the hard disks with an SSD. :p

Yeah, i would not consider it a real system without SSD and 16gb ram:)
