does this program make a copy of the outlook files and then convert the copy, or just converts the files you have, and not leaving the original .pst intact

As far as i know it leaves everything intact and just extracts mails and attachements from outlook into a different folder, with files readable by mail.app.

That's exactly what it does. It doesn't do anything to your PST file, just exports the data into a format that can be easily imported into a Mac. Great app!
