The new UI for Outlook is a mess.
Impossible to add a CC, it won't accept an email address I know is valid (works in the oldUI) and it is impossible to even visually confirm an address as you can only see very small part of that address.
Reverting to the old UI is also very difficult.
When setting up the new UI, it offers to import your old mail, calendars, and contacts and after that is complete it still prompts me to import the same stuff again.
Very poor programing indeed.

That's typical Microsoft for you...

I've been having problems where my emails won't download since 2021. Every single time when the app updates (usually every 2 weeks), I hope and pray that this update is the one where my messages will download. But it's not. lol...
 
Do you have any screenshots to share? I don't see any of these problems.

For CC, you have to click the 'Cc' on the right side.

First, Thanks for the intended help. I am using an M2 MBA 2023, and when setting up the new UI I choose the far right Compressed option last of 3 choices. I was in a hurry and fighting the new UI which I didn't ask for, MS just imposed it on my system.
The Cc mark was visible, but my screen was nothing like the roomy one in your post. I could bare see the name of the target address before the @ mark, and as I knew that there were 2 target addresses for that person, I wanted to send a message to both addresses. Couldn't see the address to confirm that it was correct and the blasted app refused to accept the correct name of the person I wanted to Cc!, popping up "a non-valid email address"!
After that I found a way to revert back to the older UI, so I can't - and definitely don't want to - revert the UI just to show you what was happening.
I also have an iMac 15,1 that also has Outlook installed, but so far that system refuses to revert to the former UI.
Too frustrating to try to replicate the issue there, although it probably could be done.
That system is strictly a backup system now.

Look under the help menu and see if you have an option to revert to legacy/classic. I refuse to use this hot a$$ garbage and for now you can go back.

Thanks!! I didn't see that until you mentioned it. All good for now.
In reflection, I can't believe how inept the programmers were when they redesigned this app. Really disheartening actually to see the lack of common sense, yet alone expertise in UI!
That is not to say that the classical UI is good, it is just barely usable as it is.
The new UI is definitely not.

The old UI was cluttered and kinda all over the place but it was feature rich and still looks like it was designed for adults. The new interface is an adolescent eye sore which looks like it was made for children, and it lacks tons of features which they promise to add back over time.

Tried it, and my inbox will only show 2 years of emails, no matter how much I sync. Anyone else seeing this? Total disaster! I went back to the old version.

Just in case, I tried to export my mail and contacts, got an Mbox folder using a method I saw on the net.
However, Thunderbird refuses to import that folder.
Is there any easy way to get a backup Thunderbird system (latest version 102.11.1) with all of my Outlook mail transferred?
In addition, I find the new Thunderbird app hard to use; even tried to manually re-create my Outlook setup, but there are so many stumbling blocks along the way (adding contacts, etc.).
Any help appreciated.

This is Microsoft's new way. They want so bad to be like Apple, they cut features left and right without thinking about it. They have also removed the ability to delete email folders. If you use Mail.app or other clients you get a ton of folders in 2 different languages (if you are not English speaking) and there is no way to remove them.

You may have to go to the settings option and change file sync settings to pull “All Messages”.
