So, I walked into my office this morning to see that I'd forgotten and left my Pencil charming via the Lightning adapter over night (roughly 7hrs)......now, I've seen this guy get a full charge in something like 10 min, so......7hrs was WAY overkill........any ideas on whether or not this will have adversely affected it?

I do not think so. There must be some protection against such cases. I think you need to keep using that and see wnat will happen. If everything works as you have been used to - everything is fine.

the pencil i have is on charge nightly and will stay on charge across the weekend if i dont pick up the tablet and want to use it. same with any rechargeable device i use (toothbrush, phones, shaver, tablets, etc)

there is a protection circuit thats built into the battery the pencil uses. nothing special, this is common...
