I am running Catalina PB. Yesterday I finished a few long hours work on a Pages document, which I had saved on my Mac desktop. I had an earlier version in iCloud, thought I no longer needed that one, so I deleted it. With that action I saw the desktop doc on my Mac disappear for my very eyes. It was still in the “recent” drop menu but when I chose it a message popped up saying it could not be found. Anyone has an idea if I can retrieve it somewhere?

I try to avoid saving anything in iCloud (I prefer dropbox and onedrive) due to issues like this, and the fact Spotlight (on Catalina) always highlights files in iCloud drive before local versions, even if you put all iCloud folders in the privacy tab.

In your case, do you think you saved it in the Documents/Pages area of iCloud, or are you using iCloud's "Desktop & Documents folders" sync? If the latter (which I've never enabled) I'd hope your deleted file is simply in the Trash/Bin. If the former, then maybe use Spotlight to see if other versions of the file are lying around?

Unless you "duplicate" a file Pages will move the original to the new location if you save to a different place.
If iCloud has not synched and you delete in the iCloud folder it will think it is that file.

An Option-Save As has the classical Mac behavior. I never liked this change.
