Can't seem to find how to change character spacing in a Pages document on my iPad Pro running 9.3 - or is it even possible?
 
I've poked around and haven't that capability. There are quite a few things that are possible in the OSX version of Pages that is NOT possible (or directly possible) in the iOS version. That is sad considering how much functionality was gutted out of the OSX version to make it compatible with iOS.

There's no direct way to apply user-defined character styles in iOS Pages. But you CAN copy and paste a character style... highlight the text that contains the desired character style and press Cmd-Opt-C (to copy character style)... then highlight the target text and press Cmd-Opt-V (to paste the character style).

I think that this may work for you, but you'd have to initially edit the document with OSX Pages to create sample text with that character spacing.

When working on a document I have a standard line of text that I initially insert into the document that contains the character styles that I'll be using and then copy and paste as needed. When the document is completed, I delete that line. (If I need to apply character styles after that reference line is deleted, then I copy the style from other text in the doc)

Imagine, Apple can't even program their own iWork Apps to have the same functionality on iOS as they do on OS - shame on Apple.
