Are there big differences between these two? Do they both essentially enable the same tethering abilities and still 'mask' your tethering? Just two different companies?

They "masking" part is a myth.
If the carrier digs and looks into your usage they will know you're tethering.
No way to hide it 100% and make it untraceable no matter what hack you're using.
