I currently am using an iPhone 4S on AT&T using an "Unlimited Data Plan".
I want to be doing some light tethering to my computer for just some web browsing.

I installed PDAnet, and it has an option to hide the tether so AT&T can't know I'm tethering.

Does this feature really work?

It's hit and miss.
I think your success simply lies in whether you're being checked/flagged for tethering or not.

In principle it should work but there are stories where notices have been sent even though the subject was doing as you are- precautions and all.

I tether with PDAnet to my iPad and use it pretty generously. Have been for 4-5 months now and had 0 warnings. I'm guessing that since it all shows up as iOS traffic there is almost no risk of getting caught. If you tether to a laptop, you're running a greater risk since there is a different signature being sent on the data traffic. If you need to use it for a laptop, then I'd suggest using it very sparingly and make sure hide data is on.
