Apparently, PDF Nomad is no more.

What I need to do is combine two PDF documents into one, where one file is the odd-numbered pages and the other file is the even-numbered pages, such that they 'interleave': page 1 of the second document becomes page 2 of the combined, page 2 becomes page 4, etc.

Does anyone know of a current app that does that?

PDFsam Basic should be able to do that.
"The PDF mix module lets you merge two or more PDF files taking pages alternately from each input file, in straight or reverse order."

Apologies it's taken me a month to acknowledge and thank you – notifications oversight at my end. I have tried it and it works just as you said – the Alternate Mix function – and with further sophistication / options beyond those of the faithful old PDF Nomad.
