For different reasons I am looking to replace both my late 2012 mac mini (2.3Ghz 16GB, 2xSSDs) which I use for FCPX work, and my gaming pc (laptop with i7 4710HQ,32GB RAM,980M with 4GB).

Am I going to experience significant boost in performance vs the mini, and anything close to the gaming performance of my laptop?

I am thinking about a 2019 iMac (27").

Not sure if it matters, but I already have a 4K monitor (40" by Philips).
 
I can't say regarding gaming performance, but a 2019 27" iMac (any config) will obliterate the 2012 mini in Final Cut. Effects will render faster, exports will happen faster, timeline performance will greatly improve. With the iMac you will be able to layer on effects on clips (even in 4k) and play them back in real time without needing to render first.

The iMac performance in FCPX will be a quantum leap forward for all but the very lowest resolution projects. Unless you edit 480p video, the iMac will feel significantly faster.
 
I had a similar config Mac mini and I can see a big difference while using an i5/580X/512 SSD 2019 iMac. The impact of having a newer SSD and dedicated graphics is probably the biggest reason why everything feels snappier, just on a macOS level.
