Phone 7 Plus to XS Max

I bought a SIM-Free XS Max and I cant remember the process of transferring the "stuff" on my 7 Plus to the new phone. I have my 7 Plus backup to the cloud and to my iMac and will backup right up to the time the new phone comes.

Do I need a new SIM card for the XS Max or can I use the old one?

Pop in SIM, when setting up XS choose restore from iCloud backup.
