I want to be able to still receive all notifications (emails, texts, etc.) however I do not want the phone to ring or see when someone is calling (phone screen comes on)
Is there any way to set it so that I still get all notifications except for the phone lighting up when a call comes in?
 
Other than blocking every contact and unknown caller I think you'd have to set call forwarding somehow. Some carriers have a "secret voicemail number" that you can discover and use for forwarding…all calls would go straight to voicemail…so the best answer depends on your carrier.

Search Google for "iphone" "forward all calls to voicemail" and "rogers" (or whatever service you have).
 
I used to do this. The easiest way is getting a blank ringtone and setting it as that (you can even create one in Audacity or Garageband). However the screen would still light up.
