After using a prepaid SIM card in another country, the phone would freeze instead of going to the Siri search function (which is usually done by swiping up/down in the middle of the screen). The screen would freeze and would not be able to swipe to other pages. It would unfreeze after pressing the home button. This happened after the SIM card provider changed the SIM card and did something (not sure what it was since she was behind the counter) to the phone. Would it be possible she somehow hacked or installed something to the phone? Is there anyway to check or fix this besides restoring the phone to old backups? Thanks.

Which phone hardware and which OS version?

Might not be related to the SIM card.

I had this problem on the previous beta IOS on the 6S Plus. It went away after a reboot.
