Are there any app (or any other way) that shows me the photos taken today, but 1,2 ,3 etc years ago? Some kind of photo memory album?

I do know that Google photos have something similar, but i want to be able to display my icloud photos

So this one goes back with 20 years right?

I was also wondering if it is possible to display the date when the images was taken? Right now it doesn’t show me which photo is from what year, which can be a bit confusing when displaying a lot of photos :)
If you tap on any photo it shows the date above the photo in the menu bar

Nope, for me it shows only 1 of 5 photos, no date at all. Do you have a screenhot?
Just run this shortcut, didn’t realize it was saving outside of the photos app.

In the photos app you can also search for the specific year and it will display all of those photos. Not as specific as you were looking for though.

Are there any good iOS apps (no shortcut) that shows photo memories / flashbacks in a good way?

At risk of stating the obvious, you could simply enter "25 March" (or whatever date you wish) in the search bar in Photos. Tapping on any photo will open it up and show the year.

Just creating an album also automatically creates a memory movie (tap the … in the upper right hand corner) ;-)
