My phone was in Airplane Mode the entire time. As I looked back at some of the pics I see they were Geo-Tagged at places along our route. How is this possible?

Yup, that would be it. I believe it started being like that as of one of iOS 8 updates (while prior to that Airplane Mode would disable GPS as well).
