Hi guys now that the new iMac is almost upon us I am not sure if i should buy the latest model or one of the older ones with these specs.

Mainly used for FXP and Photoshop.
With the following configuration:

Standard glass
3.6GHz 10-core 10th-generation Intel Core i9 processor with Turbo Boost up to 5.0GHz
32GB of 2666MHz DDR4 memory
Radeon Pro 5700 XT with 16GB of GDDR6 memory
2TB of SSD storage
Gigabit Ethernet
Magic Mouse 2
Magic Keyboard — US English
Accessory Kit
 
Considering your use case, I would advise you to HOLD OUT until around June, when Apple is expected to introduce the "larger" new m-series iMac with a 30-32" display.

Of course, the old saying applies:
If you [absolutely] "need NOW" (and can't wait), then BUY now...
 
The new iMac will do the job just fine.

It really depends if you want to hold out for a larger screen and more power which will inevitably come with the iMac/iMac Pro ~30".
 
FCP is optimized for the M1 and I believe Adobe has just done the same for Photoshop so you should not have any issues with either should you choose the M1 iMac.

Might help if you explain your usage. Anyone can run those apps... but the level at which you use them makes a world of difference in which computer setup you use.

If you use it professionally, it's a no brainer to skip the new M1 Macs as they are all entry level systems. The machines designed for more professional use are still to come. You have many more dog-and-pony shows ahead to try and get you to part with your money.

I wouldn't buy an INTEL Mac unless you have a need for running Windows or really do like the idea of buying EOL hardware on the onset. Most people buy new cars, not used ones... same goes for computers. True, used can be just as good and cheaper, but it takes a different kind of consumer to accept shortcomings in favor of saving money. Professionals usually don't fall into the frugal category when it comes to their livelihood/wellbeing/sanity while working.

Apple media events are paid programming. You are a captive audience being sold vacation rental property. They know they have already made a sale because you sat through the entire presentation. What every salesman dreams of. You can't sell someone on something unless they are willing to hear your pitch. What am I trying to say? Never buy a new computer within 6 months of any sales pitch by Apple. The computers aren't going anywhere, but your head is clear of any schmaltz that was beat into it during the blitz if you wait.

Whatever computer you do decide to get... it really isn't going to disappear tomorrow... you have plenty of time to decide... unless you really did just take a sledge hammer to your current set up.

Heavy usage with adobe Animate -FXP and photoshop. I will wait for the next announcements and hoping for a more powerful iMac. I use all three programs at once, and sometimes have up to 50 layers in photoshop in one single file/image. Waiting would be best then.
 
can you live with 16Gb? you are going to get comparable or better performance with the M1 and much less fan noise.
Not my experience with a maxed out 2020 iMac.......absolutely no fan noise..repeat no fan noise!!
