I have Plex Player and Media Server on my imac. Is there a way to control Plex on my imac throught Apple's Remote App?

No try the plex app for iOS or Boxee, Plex & XBMC remote from the app store.

I don't think you can with the Apple's app, but you can with 3er paries apps, like Rowmote, Plex App and .... (there is another one but the name scape it at the moment).
 
Why every time i watch a movie it disappears from the list?
 
Sorry for aksing again but there is no such option on my plex player.

Only my list of movies,preferences,quit etc...

Select Movies. Then you should see a sub-menu with:

Is there a way the first list to be stable... ?
What list? And what do you mean by "stable"?
 
Well, recently added means just that, so the list will naturally change over time as new movies are added. It doesn't show all your movies; only those recently added. I'm not sure what you mean by "w/unwatchable movies".

Ok so is it possible to put in "recently added" place a list that shows every time all the movies of the directory?

If you want to see all movies, don't use the Recently Added category. Use the All Movies category, as highlighted in my earlier screen capture.
