So I have noticed on my iPhone in the messages screen where I have my text messages saved the contacts that do not have a name or are not stored in my phone has a plus symbol in front of the phone number.
Is there a way to fix this and only have the number to show and not the plus symbol ??

It is not there through some error in saving the number.

The (+) in front of the phone number means that the number is listed in international dialling format. When the (+) is encountered during dialling, the appropriate country code is automatically added, if needed. It's ignored when the call is not an international connection.
 
Look I have text in the phone thy are not saved with the plus symbol.
I also noticed my phone number has the plus symbol and I can’t seem to edit it.

Yes, you are correct. Your phone uses (or ignores, if not needed) that (+) as part of the dialing process.
It's presence (and use) is automatic, out of your control. It's apparently not an editable thing.
Are you saying that you have never noticed that (+) before now?
Ignore it.
