I want my AirPods 2 to connect to my Apple Watch (only), and my AirPods Pro to connect to my iPhone or MBP, depending on which is nearby or to which it was connected last. Is this possible? Thanks.

I don't think you can do that for the Watch at least. For the iPhone, you can choose 'connect to this iPhone' > 'when last connected to this iPhone' in Bluetooth settings for the AirPods.

Its designed to seamlessly switch between your devices using iCloud, otherwise.

I have a pair of Beats Fit + (or something like that) for just this reason. They are close to AirPods, and offer a lot of the same features, but they only connect to one device at a time. Switching to a new device requires interaction from me (although it's easy if I ever need to).
