Right now, when I close the screen on my macbook it goes straight into sleep. I'd like to have it so that when I close the lid when it's plugged in, it stays on, just shuts off the monitor. Is this possible?

That link from WildCowboy also mentions Jiggler which does what you want for free.

The other way is to have a USB keyboard, external screen and power lead plugged in to put it into clamshell mode but that nails the portability.

I've never used it, but I don't think Jiggler can prevent sleep when the lid is closed. It will just wiggle your mouse periodically, so the best it would be able to do is wake the machine back up after it had gone to sleep upon lid closure, but I don't even think that would work.
 
Plug in your DVI-VGA adapter that came with the computer. It doesnt have to go into anything.
The system will think there is an External Display hooked up and wont go to sleep when you shut it.

Macbooks don't come with those...
