Is is possible to read the code from an existing iPhone app? I know in the DEv center there is sample code, but I'm interested to see how certain apps work.

No, it's not. Source code is compiled to a native binary format before it can run on the device. There is no way to fully recover the original source code from the machine code.

That said, if you want to see how other people are doing things, some people are open-sourcing their work. Wordpress is an example that springs to mind:
