Possible to restore on 10.1.1 without blobs?

Currently on 10.1.1 with iPhone 7, and am having some issues that I believe a restore would solve, but want to stay on 10.1.1 in case Luca ever finishes the JB. I've tried DFU mode, but iTunes still wants to update to the latest iOS. Lost cause?

Yes, lost cause. Unless you get lucky like I did: break your device with insurance, and have a replacement given to you with 10.1.1.
