I can “add” movies and shows in the Apple TV app so that they show up in “app next”, but is it possible to view a list of all of this added content without clearing all of my play history?

Do you mean the "Up Next" list on the "Watch Now" tab of the app?
There are several shows that I have “added” that are all caught up on the latest episode/season that do not appear in the “Up Next” list until a new episode is released. It would be nice to be able to see all the shows that I’m following in one place, but I either have to search for them to remove them or wait until new episodes come out.

I see what you mean. Unfortunately, no, there isn't a way to view a list like that.
