I currently have an iPhone 5 and during the last year have started getting into photography with my phone. I was going to take my photography to the next level for 2018 and learn how to process some of these photos. So the plan was to buy a larger iPhone, either the 6 Plus or the X. Now I was just reading this article while researching recommended apps for processing photos on your iphone: https://www.photographytalk.com/post-processing/8136-the-best-apps-for-photographers

If you look at all the screen shots, I don't see a single iPhone X. They all seem to be something like the 6 Plus. So does this mean that notch in the X creates problems for editing apps?

The images are just used as examples of how the different apps would appear on a smartphone screen, not stating that only those models can be used. I've edited photos using one or more of the mentioned apps on my iPhone X without any interference from the notch.
 
I use LR Mobile. No problems at all, though when I’m home i usually use my iPad Pro 10.5 just because of the larger screen area.
Try a third party party camera app that allows raw such as PureShot (my goto), ProCam, ProCamera etc.
 
I think the camera itself on the iPhone is pretty darn good, but I personally wouldn't edit on it. Not because the screen isn't good enough or because there aren't pretty good apps out there, and on that note the built-in Photos app has gotten really quite good, but it's just so much nicer to work with a Mac
