It's the early hours of the morning where I'm typing at, and I'm still hyped for the mac mini. If you remembered a post I made months ago I said that I was looking for a mac to do video editing for my YouTube channel through iMovie and later maybe final cut pro x- my current 2012 MBA 11.6 isn't up to the task.

I don't need a laptop yet- I probably would buy a windows 360 convertible to use come 2020 when University beckons.

I would like to start with the U$1099 option with Core i5 and 8gb Ram. In addition, I would be planning to run a partition of windows 10 on this mac mini. Without further ado:
- Should I get the BTO option of 512 gb or 1tb ssd? Or is it possible to get a portable hdd on the cheap and format it to exfat to work on both oses? I need sufficient space for video files to edit.

- Is it advised to upfrade the Ram to 16gb? Right now I only intend to do imovie up to 1080P. But not sure if by the time I upgrade to 4K and final cut Pro x, will I need 16gb Ram? And I might also fiddle around with virtual windows machines on my windows partitions.

Remember, I intend this mac mini to last me for at least 6 years until I graduate from University.

I'll go down to my apple store perhaps this weekend to take a look at what the mac mini will be and perhaps then make my bto options. And then I'll need to buy a usbc hub, a 1080P monitor, a external hdd and speakers.
 
I can't answer all of your questions, but I think you'd be a fool not to upgrade to 16GB of RAM -- especially if you want it to last as long as you say.
 
- If you want it to last 6 years, certainly go with the i5, if not the i7.
- The internal SSDs are extremely fast, but whether or not you should get the additional storage is up to you. Internal space isn't as critical on a desktop and there are plenty of affordable external SSDs (and then there's the extremely fast Samsung X5 drives) for you to supplement your storage. If you plan on doing a lot of 4k footage and such, you'll probably end up with some external RAID or NAS units anyway.
- The RAM is user upgradable, so I elected for the 8gb and am purchasing 2x 16gb sticks from a third-party
