You can Sleep the Display buy pressing the following key combination:

Control-Shift-Eject (The key that ejects discs)

Doesn't pressing the "Dim screen" button over and over again put the display to sleep as well? Or maybe this is just the backlight.....

Oh my god, i've been using macs since i was 8 and i never knew this... bloody hell!

Not completely sure about whether you can do that or not but you can also set a Screen corner (aka Hot Corners) to sleep the display instead of using the shortcut.

To setup Screen Corners go to System Preferences/Expose and Space/Expose/
and look for The box that says "Screen Corners". Select which corner you want to use to sleep the display, and select the "sleep display" option from the drop down menu that corresponds to your choice.

Once that is done, your hot corner is all set up!
Now everytime you want to sleep the display, just move your mouse to the corner that you designated and the display will sleep!
