So I have a PowerBook, fiance has a Macbook Pro. Am I able to do any development on my machine?

Officially, you need 10.5.3 on an Intel Mac.

Unofficially, there are reports of people who have found ways to get portions of the SDK development tool chain to run on a PPC, but of course that would be completely unsupported.

It's actually pretty easy. Google around a bit. It involves moving some files and editing one more.

Everything I've seen works fine in the Simulator.

right, I've done that for the beta but didn't know if the signing of device certificates prevented continuing down that path. It's just my lady wouldn't be too happy if I was on her machine all the time. Unfortunately a new machine isn't in the budget. The hope being I could do a majority of work on my machine then use hers only when necessary.
