Sorry this maybe a dumb question, but I finally jailbroke my iPhone after about 8 months of use. Obviously when this was done I lost all my previously stored Apps, bookmarks, addresses etc.

Is there a way to restore this stuff as I know you're not supposed to use iTunes anymore as this will revert back to the original firmware?

You cannot RESTORE in iTunes without reverting back to the stock flash.

iTunes itself does not recognize the jailbreak and attempt to change it or anything of that nature. Just open iTunes and sync. ;)

Actually, you can. In fact, that's exactly how I Jailbroke my iPhone on 2.2.1 AND preserved the 02.28.00 baseband. How? A custom Firmware, and a good old shift-click restore ;)
 
How do you do a data synch in iTunes after Jailbreak? When I open up iTunes, it obviously doesn't recognize my newly jailbroken iPhone and asks if I want to restore to a previous setting (which will wipe all all the jailbreak data).

How can I get my previous data back while retaining the jailbreak firmware?

Just choose the option to set up as a new phone. The it'll make you enter a name for your phone...and then you can go ahead and re-sync. It won't erase your jailbreak.

I believe when I jailbroke my iPhone, I just picked "restore from backup" at that point, and it copied back all my previous settings including email settings, text & call records, etc, without interfering with the jailbreak.

Yes, you choose "set up as a new phone" first, and then go ahead and restore from backup afterward.
 
k... so im not to familiar with itunes n the whole jealbreaking n unlock, but everytime i do it to an iphone once i plug it back into itunes it asks somethin n say it will restore the last iphone and i get all my pics, contacts and all that. but this last time when it was loading all that information (which i want) it got unplugged by the cat! so how do i get it to reask me or get it to put all my old info on again? is it a one time opportunity!?!
 
If you have created the backup for your data. The backup saves eveything and you can get all your files when you jailbreak.
